our phones work as one we would like to have them working separately which I understand we will need two use two email accounts both tied to our Apple ID account not sure how to change over to that system want to keep my Apple ID just change his

You can't have two email accounts tied to the same Apple ID. You need to create a new Apple ID for one of you to use.

Apple ID – Create
When changing to the new ID, there may be some data loss, but you can minimize it. If syncing photos with iCloud, ensure Optimization is turned off in Settings/Your Name/iCloud/Photos and/or in Photos/Preferences/iCloud. Then make sure full resolution photos are on the device/computer. When signing out of iCloud, if asked whether you want to retain data, choose yes. Messages conversations will be lost if they are addressed to the ID. See the article below for other places that the old ID should be removed. See Winston Churchill's response in the below discussion. Also set up Family Sharing to keep access to your apps/purchases.

Your spouse can set up their own AppleID using a different email address. Start at https://appleid.apple.com
Then after that is set up log out of the other device and log back in using the newly created ID.
